PECORINO TOSCANO "IL GROTTA"
It originates from the ancient practice of transhumance: the long journey together with the flock that has marked the life of shepherds for centuries. To the rhythm of the seasons, a continuous "up and down" from the mountains to the valleys and vice versa in search of the best pastures. Caseificio Follonica, in over 60 years of activity, without giving up its artisan aspect, has become a well-structured company. The collection of the milk takes place mainly in the Maremma Grossetana and Laziale and in the lower province of Livorno.
Among all these superlative cheeses, we selected "IL GROTTA": it is aged in the tuff caves and the particular humidity of the place gives the cheese a unique and precious aroma.
Food and wine pairing: sprinkle the cheese with a few drops of our extra virgin olive oil, Aceto Balsamico from Modena or honey and discover the perfect combination! Taste it with one of the Tuscan red or white wine or with Prosecco as an aperitif.

Every Pecorino "IL GROTTA" piece is protected and delivered in a vacuum bag to preserve its fragrance and quality.
NOTE: we deliver quarter (approx. 700 g), half (approx. 1.4 kg) or whole form (approx. 2.8 kg) pieces. Inedible rind.

IL GROTTA 1/4 form (approx 700 g)
100 days of natural seasoning. The paste is white in colour, with a crumbly consistency. The taste is full, but sweet with accents of lactic notes. The particular processing of this pecorino allows, even after maturing, to perceive the freshness of the milk in contrast with the more decisive flavour. Tasty and delicate pecorino, with a characteristic and fragrant smell. Food pairings: excellent together with our dried tomatoes and with some drops of aged Aceto Balsamico di Modena as an alternative aperitif; we suggest to taste it with Prosecco D.O.C. or a Tuscan red wine.
