24 months - 300 g
The 24 months old Parmigiano Reggiano is considered of medium seasoning. It begins to have a more crumbly consistency compared to low seasonings, without loosing structure. The flavour is very balanced between sweetness and sapidity, reminiscent of fresh fruit and nuts.
Food and drink pairings: it is perfect with dried fruit and a structured red Tuscan wine, and together with few drops of Aceto Balsamico di Modena, or alone after a sport session. In recipes it is the most used ingredient for fresh pasta fillings. It is also very good if shredded on fresh salads, pasta or minestrone.
24 months - 600 g

The cheese is compact and dry, but not too much, crumbly to the touch and the palate, but still with notes of elasticity and softness. The colour is intense straw yellow and the flavour notes are markedly accentuated.
From a nutritional point of view it is a very low-fat and genuine cheese with a lactose content close to 0 %.
Food and drink pairings: it is perfect as an aperitif together with honey, balsamic vinegar or with a platter of cold cuts, together with structured white or red wines. It is also very good if shredded on pasta and minestrone.
30 months - 1 kg
30 months old Parmigiano Reggiano is considered of medium seasoning and is slightly stronger variant of the 24 months old one.
